| Winemaking | Merlot grapes were the first in transported to the winery in Sutton Forest and crushed into open stainless steel tanks. The wine underwent a 10 day warm ferment. The cabernet followed in May, was warm fermented for a period of three days and then a period of cooling, the batches were kept separate. During ferment the cabernet had a malolatic culture added. Remaining separate the two wines were aged for 12 months in small 2 & 3 years old American oak. A blend of 80% cabernet and 20% merlot was selected, balanced and prepared for bottling. | |
