| Winemaking | Shiraz grapes were transported to the winery in Sutton Forest and crushed into open stainless steel tanks. The wine underwent a 10 day warm ferment. The cabernet followed in April and was warm fermented and then a period of cooling, the batches were kept separate. During ferment the cabernet had a malolatic culture added. Remaining separate the two wines were aged for 12 months in small American oak. A blend of 80% shiraz and 20% cabernet was selected. | |

| Winemakers Notes | This wine is produced from grapes grown in specially selected NSW vineyards. Skilfully blended, the varieties complement each other to produce a medium bodied, flavoursome wine with the mellow roundness of the shiraz combining with the berry fruit flavours of the cabernet sauvignon.
