| Winemaking | Selected botrytis grapes were machine harvested delivered to the winery in Sutton Forest in 500kg bins and transferred direct to the bag press. The grapes were soaked on their skins for a period of six hours prior to pressing; the juice was then cold filtered in preparation for inoculation of a special yeast. Slow ferment and controlled temperature of 12c for a period of 25 days. After fermentation the wine was allowed to settle prior to fine filtering and bottling. | |
