Grapes Picked April 2007
Winemaking Selected botrytis grapes were machine harvested delivered to the winery in Sutton Forest in 500kg bins and transferred direct to the bag press. The grapes were soaked on their skins for a period of six hours prior to pressing; the juice was then cold filtered in preparation for inoculation of a special yeast. Slow ferment and controlled temperature of 12c for a period of 25 days. After fermentation the wine was allowed to settle prior to fine filtering and bottling.

Hot on the heels of our highly acclaimed 2003 Botrytised Sauvignon Blanc we have a small parcel of 2007 botrytised Sauvignon Blanc .
 A very elegant wine showing delicate semi-dried peach notes with up front gooseberry aromas. A balanced and excellent fine acidity, luscious but not cloying mouth feel. Cellaring: Drink now to 2010.
