Winemaking

Pinot Noir grapes were machine harvested and delivered to the winery in peak condition. After de-stemming the grapes were crushed directly into open stainless steel vessels, cold soaked for two days prior to warming and yeast inoculation. Fermentation at 28c for a three day period, cooled down to 22c for a further 14 days. During ferment the pinot was plunged daily with the addition of a malolactic culture. On completion of the ferment the wine was aged  for a period of 8 months in a mixture of 20% new and 80% two years old French barriques. It was then racked and prepared for bottling in January 2007.

January 2007. We have sealed this wine with a stelvin screw cap, and have total confidence that you will receive the wine in premium condition, further more the wine will  continue to mature and develop its true character without the risk of cork taint development.

Winemakers Notes The classic red grape of Burgundy, and one of the varieties used in the blends for champagne in France. Experimentation with the variety in Australia is beginning to produce some outstanding results, especially from cool climate regions. Medium crimson colour. The wine shows ripe cherry notes with hints of game and forest floor. Good structure and layers of soft tannin, smooth velvety mouth feel. Grapes for this outstanding wine were selected from vineyards in the cool climate region of the Southern Highlands, NSW. Drink now to 2012.
Serving Suggestions Peking duck; try with a seared salmon steak.
