Winemaking

The grapes were crushed and destemmed; the must was then pressed and cold settled, clarified and inoculated with selected yeasts. Fermentation was carried out in stainless steel tanks at cool temperatures, retaining freshness and flavour. The resulting blend was balanced and stabilised prior to bottling.

Bottled May 2007. This wine is sealed with a stelvin closure, which enables the wine’s freshness, aromatics and varietal character to be retained over a long period. It will also ensure that you get full enjoyment from every bottle, every time.

Winemakers Notes

Despite offering some of the finest, clear - cut aromas and flavours of any variety in Australia, Riesling battles for the affection of the wine drinker. Australia produces world class, cellar worthy and flavoursome wines of exceptional value. Grapes from specifically chosen vineyard sites in the Southern Highlands were used for this wine.
Attractive pale straw colour.
Delightful fresh floral aromas and flavour highlights of green lime citrus on the nose, with a balanced fruit driven palate, refreshing with plenty of mouth lingering flavours ending with clean crisp acidity. Delightful drinking now, this finely structured wine will clearly improve with a year or two in bottle.

Serving Suggestions A light Thai green curry; grilled scallops, pan-fried whiting.
