Following crushing and destemming the must was pressed and cold settled, clarified and inoculated with selected yeast strains. Colombard fermentation was carried out in stainless steel tanks at cool temperatures to retain freshness; the chardonnay component was racked into American oak for a period of 3 months; wine was blended and prepared for bottling. |

The fruit for this wine was sourced from a selection of vineyard areas in New South Wales. Pale straw in colour. The elegance and flinty structure of the Colombard has combined well with the fuller more intense flavours of chardonnay creating a very drinkable and balanced wine. Enjoyable drinking now. |
