| Winemaking | The grapes were transported to the winery and the batches were kept separate. Following crushing and destemming the must was cold soaked in open top stainless steel fermenters for a period of 24 hours. The must was warmed to 25oC and inoculated with specially selected yeast cultures. Fermentation was carried out in the stainless steel open fermenters for a period of 7 days. Following pressing the wine was racked into a mixture of new and old American oak barrels. After 12 months ageing on lees, the wine was blended, balanced and prepared for bottling. | |

| Winemakers Notes | Produced from grapes grown on carefully selected premium vineyards in the Southern Highlands of New South Wales. Grapes from each vineyard were kept separate for the winemaker to create the final blend. Cherry red in colour. Rich fruit flavours of ripe berries, spice and plums integrate well with subtle French oak characters. Well balanced acidity, delicate tannin and a mouth filling finish. Enjoy now, this wine will benefit from further medium term cellaring. Optimum 2010. | |
