Grapes Picked Machine harvested late April 2006
Winemaking Following crushing and destemming the must was pressed and cold settled, clarified and inoculated with selected yeast strains. Fermentation was carried out in stainless steel tanks as well as barrel fermentation at 13 degrees Celsius. The wine in stainless steel (68%) was then racked and filtered immediately to retain flavours; balance of the wine remained in American oak (32%) for a further period of eight months, adding to the flavour and complexity of the wine.

Bottling

August 2006. In keeping with world-wide trends this wine is sealed with a stelvin closure, retaining the wines freshness and varietal character over long periods. It will also ensure that you receive the wine in premium condition, getting full enjoyment from every bottle, every time.

Chardonnay is now one of the worlds most popular white wines for above all other, it yields a wide spectrum of flavours that range from the light fruitier styles to rich - golden buttery tastes. Grapes for this outstanding wine were selected from premium vineyards in the Southern Highlands. Pale straw with green tints in colour. A fine well balanced cool climate chardonnay showing citrus, pineapple and a background of sweet vanillin aromas from the well handled American oak. An elegant fruit driven wine showing delightful bouquet and length of palate. Although enjoyable now, the wine will continue to develop in bottle, best up to 2010.
Serving Suggestions Ocean trout, crayfish; try pan friend quail.
