| Winemaking | Grapes from this outstanding vintage were crushed and de-stemmed; the must was then pressed and cold settled, clarified and inoculated with a variety of selected yeast strains. Fermentation was carried out in stainless steel tanks at 13oC, a further 3% was barrel fermented in French oak for three months. The wine was racked and filtered immediately to retain fruit flavours. Following careful blending the wine was prepared for bottling. | |

| Winemakers Notes | Sauvignon Blanc is one of the most instantly recognisable of grape varieties, noticeable for its herbaceous and tropical fruit flavours. Grapes for this wine were specially selected from premium vineyards in the Southern Highlands. Attractive pale straw colour with green tints. This wine is showing great depth of flavour. Light tropical fruit tones with a hint of passionfruit. Rich mouth filling flavours with a clean finish. Delightful drinking now will be at its best over next two years. | |
