Winemaking

Following crushing and de-stemming the must was pressed and cold settled, clarified and inoculated with selected yeast strains. Moscato fermentation was carried out in stainless steel tanks at cool temperatures to retain freshness.

Wine Analysis Alcohol 6.0%; Titratable Acid 7.5g/L Residual Sugar 120.0g/L pH 3.30
Bottled January 2008 - This wine is sealed with a stelvin closure which will insure that you get full enjoyment from every bottle, every time.

Winemakers Notes The fruit for this wine was sourced from a selection of vineyard areas in New South Wales. Pale straw in colour. The elegance and fruity structure of the Moscato has created a fruit driven and balanced wine. Enjoyable drinking now.
