Winemaking at SHW integrates new world technology and old world artistory to
complement the natural flavours and aromas unique to its estate grown grapes.
Hand picked and machine harvested grapes are delivered to the winery where the best
available equipment is used to produce the outstanding varietal wines of SHW.
Musts are pressed in state-of-the-art pneumatic presses to obtain the finest quality juice.
Fermentation occurs in stainless steel tanks to control the rate and length of fermentation
and to conserve the natural fruit of the grape. Malolatic fermentation softens the wines
natural acidity and develops the evolving complexity.
The new wines are then designed to their greatest potential through ageing in French and
American oak casks. The wines are aged under optimal condidtions to acquire greater
maturity before their release to the market.
Southern Highland Wines talented winemaker Eddy Rossi graduated from Charles Sturt
University, whilst studying he was at McWilliam's Wines. In 1987 Eddy moved to
Rosetto Wines where he was to become Chief Winemaker a position he held for five
years. He has an outstanding palate and has recently become an associate judge on the
wine show circuit.
"We strive to maximise the unique flavours that develop in the cool climate region. Our
winemaking techniques enable us to maximise the distinctive characteristics from each of
our vineyards . Our aim is to produce cool climate wines of the highest quality."
